Holli's Zucchini Bread

3 eggs
1 cup oil
1 1/2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
2 cups flour (self rising)
3 tsp. cinnamon

*optional* 1 cup chopped pecans AND/OR 1 cup raisins

Preheat oven to 350*. Grease and flour 2 loaf pans. In large bowl mix eggs, oil, sugar, zucchini and vanilla. Blend in flour and cinnamon. Stir in nuts and/or raisins. Bake approx. 1 hour or until center is set.

Mini loaf pans may be used in place of loaf pans. Decrease cook time to 30 minutes, or until center is set.
