I have always loved banana nut bread. My great grandmother used to make it for me. She made sure I always had a loaf to take home. I am very sad I don't have her recipe. This is the closest I have ever gotten to it. Enjoy!
Hawaiian Banana Nut Bread
3 c. all purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
3 eggs, beaten
1 1/2 c. vegetable oil
1 c. mashed riped bananas ( about 3 bananas)
1 (8 oz.) can crushed pineapple, drained
2 tsp. vanilla extract
Combine dry ingredients; stir in nuts and set aside. Combine remaining ingredients; add to dry ingredients, stirring until moistened. Spoon batter into 2 greased and floured loaf pans. Bake at 350 for 1 hour or until done.
-Instead of flouring the pan, I grease and "sugar" the pan. Makes a great crust!
