A great summer salad.
Greek Pasta and Chicken Salad
Chicken, cooked however you like - I prefer grilled (great use for leftovers!)
1 lb. bow tie pasta
3/4 cups extra virgin olive oil
1/2 cup balsamic vinegar
1/2 cup white wine vinegar
juice of one lemon
1 T. dried oregano
1 T. dried basil
1/2 T. fresh garlic, diced
pepper and salt to taste
6-8 oz. crumbled feta (I use the one that has dried tomatoes added)
1 can artichoke hearts, quartered ( I dice them before added to pasta salad)
Cook pasta, drain and cool. Combine oil, vinegars, lemon juice and spices. Toss pasta, oil/vinegar/spice mixture. Last add feta,artichokes, and chicken and toss again. refrigerate for several hours before serving.

Fudge Pie

Fudge Pie
1 Unbaked Pie Shell
2 Squares (2 Oz.) semisweet chocolate
1 stick butter
1 cup sugar
2 eggs, beaten
Preheat oven to 375 degrees. Melt chocolate squares in microwave in 30 second intervals so that the chocolate does not burn. Melt butter in separate dish in microwave. Combine the melted butter, melted chocolate, and sugar. Once mixture is cooled down, add eggs (if not they will scramble, and that is bad...).
Pour mixture into unbaked pie shell. Bake for 25 minutes or until set.

Broccoli Cheese Corn Bread
A change to the traditional plain corn bread. I try to make this at least once a week to make myself happy.
Broccoli Cheese Corn Bread
1 box Jiffy Corn Bread Mix
4 eggs, beaten
1 stick butter, melted
1 onion, chopped
1 box frozen chopped broccoli, thawed
2 cups shredded cheddar cheese
Mix all ingredients. Place mixture in a 9x9 greased pan. Put in 350 degree oven for 30 minutes.

Holli's Cream Cheese Pound Cake
Not only does Holli make good zucchini bread (in a previous post) but she makes good pound cake, too. I am a sucker for a good pound cake.

3 8 ounce block of Cream Cheese
1 cup sugar
5 eggs
Cream sugar and softened cream cheese. Add cake mix and eggs a little at a time. Bake 50 or so minutes at 325 degrees. Bake in tube or bundt pan.

3 tbsp. parmesan cheese
1/2 tsp. salt
1/8 tsp. pepper
1 egg
2 tbsp. milk
6 pork chops
Preheat oven to 350 degrees. Place butter in a 9x13 dish and melt butter in oven. Combine cracker crumbs, cheese, salt and pepper; set aside. Blend eggs and milk in bowl. Coat pork chops with crumb mixture; dip in egg mixture; coat with crumb mixture again. Place in baking dish with melted butter; bake at 350 degrees for 30 minutes. Turn pork chops and bake an additional 15 minutes.

Baked Hot Potato Salad
I first had this dish when I was pregnant. I think I ate half the dish before I knew it! I immediately asked for the recipe - right after getting myself another serving! It is a favorite at my house!

1 lb. soft american cheese, diced - Velveeta
1 cup mayonnaise
1/2 cup chopped onions
1/2 pound bacon, fried and crumbled
2 tsp. pickle relish (I usually omit this. Don't tell my husband, he loves pickle relish. I don't...)
salt and pepper to taste
Toss potatoes with cheese, mayo, onions, and seasonings. Put into 9x13 buttered dish. Combine bacon and relish. Spread over potato mixture. Bake at 325 degrees until thoroughly heated. Serve warm.

Strawberry Twinkie Desert
Twinkies?? YES! TWINKIES!! And strawberries, too? YES! I know, it's heaven, right? It' genius too!!! Just take it to your next summer picnic and you will be loved by all!!!

1 (13.5 oz.) container strawberry glaze
8 Twinkies
block cream cheese, softened
1 (14 oz.) can condensed milk
12 oz. Cool Whip
1. Combine strawberries and glaze in a small bowl.
2. Slice twinkies and line bottom of a 9x13 dish.
3. Beat cream cheese and condensed milk until smooth. Fold in Cool Whip and spread mixture over Twinkies. Spoon berries over this.
4. Refrigerated and serve to many happy people!
